Pulled Pork Tacos with Pickled Pineapple

Every Night of the Week by Lucy Tweed (p. 148)

Serves 8

This is a slippery slide into a heavenly situation. Smoky, delicious and stringy.


1.5 kg (3 lb 5 oz) pork neck
16 tacos


1 cup (250 ml) pineapple juice
1 cup (250 ml) barbecue sauce
3 tablespoons American mustard
1 onion, skin removed and quartered
2 teaspoons coriander seeds
1 tablespoon cumin seeds
2 tablespoons dried oregano
1 cinnamon stick
1 head of garlic, cloves peeled and lightly crushed
1 tablespoon sea salt

Pickled pineapple

2 cups (500 ml) white vinegar
¾ cup (165 g) sugar
1½ tablespoons sea salt
3 cardamom pods, bruised
1 whole pineapple, peeled, cored if liked and thinly sliced


3 cups (225 g) shredded cabbage
2 tablespoons kewpie mayonnaise
juice of 1 lime
2 tablespoons chopped chives
1 teaspoon sea salt

Optional ingredients

Thinly sliced red onion, coriander (cilantro) leaves and lime wedges


  • Low and slow pork … all in the pot, lid on, set and forget. No browning.
  • Pineapple is sweetly pickled with some spices.
  • If you pre-shred the cabbage, pick the herbs, chop some chives and pack some soft tacos, you’ve got one killer bring-a-plate setup that will muscle over anyone else’s contribution.
  • I even took this stable of ponies camping!
  • Preheat the oven to 120°C (235°F).
  • Combine all the marinade ingredients in a heavy ovenproof dish with a lid. (I use a Dutch oven; you could also use a slow cooker, but I’m not really sure of the settings.)
  • Add the pork and turn to coat on all sides.
  • Place a piece of baking paper over the pork and press it down into the juices – this is like a face mask, keeping the whole thing moist while it cooks. Pop the lid on, place in the oven and cook gently for 6 hours.
  • Remove and allow to cool, then shred the meat with tongs and stir with all the juices, breaking up the garlic and onion as you go. You can discard harder spices, like the cinnamon stick.
  • The pork can be made ahead of time, and preheated to serve. You can do this in small batches in the microwave, checking and stirring often, or in a saucepan over medium–low heat, stirring occasionally.
  • For the pickled pineapple, combine the vinegar, sugar, salt, cardamom and 2 cups (500 ml) of water in a saucepan. Bring to a simmer, then allow to cool slightly.
  • Place the pineapple in a large airtight jar and pour the pickling liquid over the top. Seal and allow to pickle for at least an hour. Store in the fridge for up to 2 weeks.
  • To make the slaw, toss all the ingredients together in a bowl.
  • Warm the taco shells*.
  • Take all the components to the table and let everyone help themselves.

*A bit of a tip: I really don’t like the hard shells you can buy off the shelf ? they taste like stale corn chips to me. I choose the soft ones, give them a quick spray with oil and heat in the pan, then let them cool flopped over an old paper towel roll. DIY crispy tacos. Or just keep them soft.

In collaboration with the fantastic wine importer Vinify, we’re delighted to announce a very exciting, highly exclusive wine tasting from two top wine producers from the Piemonte region. Winemakers Valter Bera and Lorenzo Revello are flying in to lead this special masterclass at Bayswater Fine Wines!

Our valued members have the opportunity to be some of the first in the country to taste a selection of pre-release wines straight from Italy, almost 10 weeks in advance. We’ve arranged a premium selection of 12 stunning Italian wines, featuring the lighter, elegant Bera wines working beautifully in combination with the more powerful, tannin filled Revello wines.


Established in 1990, the renowned Bera family’s winery has been passed down through generations, occupying the beautiful rolling hills of Neviglie, Italy. Valter Bera continue to use organic practices that remain simple, honest and traditionalist, representing the very best of small-scale Asti and Moscato d’Asti production in Piedmont for over a century. Across over 30 hectares of prime growing land, the estate’s flagship has always been their delicately fragrant and extremely energetic Moscato. However, today the younger generation Riccardo and Umberto look towards their future as custodians of some of Piedmont’s greatest areas for the production of high end Nebbiolo.


Yielding from La Morra in Barolo, Italy, Revello Winery is a fantastic example of outstanding quality achieved by a small-scale winery. Venturing in limited production of Barolo, Barbera, Dolcetto and Langhe wines, Revello focus 10 months of their year purely on maintaining excellence in their vineyard. Established in 1990, their organic and biodynamic vineyard practices have remained unchanged and religiously followed, with native cover crops intended to intensify the soil nutrients and birth healthy fruit. The Revello family encapsulate all that is brilliant about the newer generation of Barolo grower/producers, treading the line between ‘modernist’ and ‘traditionalist’ veins and maintaining quality through hard work in the vineyard – a true grower’s mentality.

Along with a selection of 12 top of the line wines from these outstanding wineries, we’ll be including gourmet antipasto platters with beautiful products yielding from the region. After leaving everyone to their own drinking devices over the Silly Season, Wine Class is back in full swing this February so that we can all pretend to be sophisticated, refined wine drinkers once again. Kicking us off this Feb, we’re delving into the vast world of French Wine. If you’re more of a hand-gesturing-vespa-riding kinda guy/gal or you prefer your plonk a little bolder, we’re hosting a fantastic Italian Wine & Cheese Tasting later in the month. And if you can’t make our first French Tasting, we’ve got you sorted this March with what promises to be a great night of paired French wine & cheese.

These are all terms that wine drinkers recognise… but what do they really mean in terms of what’s in the bottle?

The world of French wine can often seem daunting, especially when you consider there are over 200 native varieties to get your head around with labelling that rarely helps you understand what you’re actually drinking. However, when it comes to white wine, it’s not as difficult as it seems. This is because there are a handful of major regions each with such distinctive styles, and once you understand what is grown where and why, you can make huge progress in understanding French wine in only a matter of hours.

In this tasting we will travel to France, moving from the cooler north to the warmer south and you will gain a clear understanding of the different varietals that make up the picture of French white wine and what the flavours and textures are of each.

Run by Etienne, our French wine expert, this will be a fun and informative evening with 8 premium French white wines paired to a selection of delicious French cheeses.
